First published in 1877, this revised and enlarged edition includes five pages of facsimile menus from the restaurant, as well as two pages detailing the various rooms at the restaurant, with photograph of the staff in the kitchen. The book is then laid out as an encyclopedia of cookery, alphabetically by ingredient, recipe, or technique. 

Originally opened in 1867 by August Kettner, rumored chef to Napoleon III, Kettner’s was one of the first French restaurants in London. Popular with historical figures and creatives throughout its history, King Edward VII is said to have courted his mistress, actress Lillie Langtry, there. The lounge and Champagne Bar have welcomed visitors including Oscar Wilde, Agatha Christie, Sir Winston Churchill, Margaret Thatcher and Bing Crosby. Mild rubbing to spine ends and slight softening to corners, else very good — a marvelous book.
