This all butter fruit cake is made with vine fruits soaked overnight in spiced rum from the Caribbean.
A deliciously dark, moist and rich cake, it includes juicy sultanas, raisins, currants, sumptuous cherries, tangy orange and lemon peel and a pinch of spice. The subtle taste of the spiced rum lends a hint of tropical sunshine without being too strong, so the full flavour of the fruit comes through.
It contains no artificial colours or flavours, no palm oil, and has been made to a nut-free recipe.
Each cake has been baked in the tin it is sealed in to ensure it is deliciously soft, moist and as fresh as the day it was baked, then presented boxed.
