There’s no guesswork: The bench-top sharpener lines up to any edge. Then simply switch on the machine—which has a 7-speed motor—and start grinding away on the gritted belt. We tried out all kinds of knives, from santokus to paring knives to serrated Milk Street blades like the Tri-Edge and Kitchin-tan, and the results were consistent: professional-level, razor-sharp edges. We love that this version comes with a separate blade grinding attachment, which gives the user the power to free-grind blades up to 35 degrees. How to Use: The sharpener can grind any blade ranging from 10 to 30 degrees. There’s also a 65-degree scissor guide and a variety of belts in multiple grits. Turn on the sharpening cassette—or grinding attachment if you prefer more freedom—and slide your knife along the belt from the heel to the tip, repeating and turning until it’s to your liking. Test the sharpness of the knife by slicing a piece of paper.
