However, with the rise of refined sugar and cornstarch—a then experimental product from a German scientist—he modified the recipe for Turkish delight, developing the classic sweet flavor and jelly texture known and loved today. This secret recipe grew so popular and beloved that Sultan Mahmud II, the ruler of the Ottoman Empire, appointed Bekir Effendi chief confectioner to the palace.
