Motoshige’s version is embedded with about 50 sharp ceramic pieces to tackle tough ginger: As you grate in a circular motion, a high yield of pulp is pushed to the surrounding reservoir, which keeps the grating nubs clear for uninterrupted use. The Suri Plate is durable and sturdy, thanks to its non-reactive Iwami clay material and a rubberized base that prevents slipping and sliding. Simply rinse to wash, an unthinkable feat for flimsy metal contraptions and some wand graters that clog with hard-to-clean stringy fibers. Use it to grate ginger and wasabi, plus firm fruits and veggies (like apples, radishes, beets or carrots) and even cheese.

What is Iwami Ware? Iwami ware, or “Iwami-yaki” in Japanese, is a pottery style that originated in Iwami, Shimane Prefecture, in the mid-18th century. Firing the pottery in temperatures of over 2,300 degrees Fahrenheit (1,300 degrees Celsius) results in beautifully colored, durable ceramics that are resistant to salt, acids, alkali and water. They’re traditionally used for water storage, pickling and even roof tiles (known as sekishū-gawara). Since 1925, Motoshige has manufactured suri plates and mortars made with Iwami ware.
